This pitch-perfect cocktail combines juicy strawberry with herbal Thai Basil, citrusy Free Spirits Spirit of Gin and frothy egg white (or aquafaba), inspired by the classic Clover Club cocktail.
We chose Free Spirits for this cocktail because the citrus flavors in their gin play well with the berry and herbs in the Som Cordial.
- 2 oz / 60 ml / 1/4 cup Free Spirits Spirit of Gin
- 1.5 oz / 45 ml / 3 tbs Som Strawberry Thai Basil Cordial
- 1 oz / 30 ml / 2 tbs egg white or aquafaba
Combine all ingredients in a shaking tin or mason jar and shake without ice for about 20 seconds until nice and foamy. Add a good handful of ice cubes and shake again briefly to chill. Strain into a coupe glass and garnish with an edible flower petal.
When shaken, egg whites create a delicious, frothy texture that to me feels like drinking a cloud. If you are concerned about salmonella, wash your eggs with unscented soap before using.
Aquafaba is a great vegan alternative to egg whites and froths up the same way. Aquafaba is chickpea liquid - what's leftover after you drain the can or cook dried chickpeas from scratch. If cooking your own, then you'll want to omit salt and other flavorings. When mixed in a cocktail it imparts no strong flavor so don't worry, your cocktail won't taste or smell like chickpeas.
